What do you do with your left over food scraps?

Well heres a solution, COMPOSTING. 

NYC has a truly awesome compost program. There are so many food scrap drop-off places ALL over!


How Do I get started?


Step one: What to save

  • Fruit
  • Vegetables scraps

Step Two: Where to store compost at home

You would think storing compost would be hard, but its really easy.
Keep your compost in any container (I use plastic bags that you put produce in when you go to the supermarket. Store your storage container with compost in refrigerator or freezer (i've had best luck with the freezer, no odor, no hassle.

FAQ:

How often do you drop off your compost?

 It really depends on how much compost I have. There are two contributors to our household compost, in which we usually drop off every week (Saturdays to be precise). Sometimes if my roommate and I have both been busy, we can get away with two weeks, but its always a wonderful walk through the park to go to Grand Army Plaza Greenmarket

The Recipes: Pineapple Sorbet


Getting ready for summer, enjoy this sorbet!

Ingredients:

1      ripe pineapple
4      tablespoons sugar
1      cup water
4      tablespoons fresh lemon juice

Equipment:
Blender

Instructions:

2) Put sugar, water, lemon juice and pineapple in blender
3) Blend until completely smooth
4) Freeze for four hours or until frozen, mix frequently for best results
5) Re-blend and serve 

6) Store in freezer 

Visuals:

Pineapple, Sugar, Lemons, Water 
Combine in blender
Blend until smooth
Store in freezer
(Bottom half of our freezer is compost [: )
This turned out great!
Delicious & healthy!


Tips:
If pineapple isn't ripe, you may need to add more sugar to make it more sweet

The Recipes: Ramp Chickpea Spread

A yummy easy snack or topping!

Ingredients:

1            small bunch of large ramps, chopped
2 1/2      tablespoons of fresh lemon juice
3            tablespoons olive oil
1/2         teaspoon salt
2            cloves minced garlic
2            cups of cooked chickpeas
1/2         cup chickpea cooking liquid/water/vegetable stock

Instructions:
1) Put everything in blender or food processor EXCEPT 1/2 cup chickpea cooking liquid/water/vegetable stock

2) Pour 1/2 cup chickpea cooking liquid/water/vegetable stock as needed to get a smooth creamy consistency

If you need more "flavor":
Add more lemon juice
Add more garlic
Add tahini
Add citrus (I think orange would taste awesome!)
Add fresh herbs

Note:

If cooking dried chickpeas, soak overnight (8 hours or longer),  drain and rinse before boiling (do not use water you soaked them in!!!), boil until soft, save liquid after boiling and use in place of water or stock

Dried chickpeas and all dried beans expand when soaked, using two cups of dried chickpeas will give you close to four cups cooked chickpeas (use a little roughly a cup to a cup and a half for this recipe of dried chickpeas)

Save this liquid for puree

Fresh ramps from Union Square Greenmarket, chickpeas, fresh lemon, fresh garlic, olive oil, salt

Put all in blender or food processor

Puree until smooth, added chickpea liquid to get smooth creamy texture

Store until use in refrigerator or serve instantly with pita or on a sandwich!
