Baby Carrot Fries

Baby Carrot Fries


Ingredients:
2       Bunches of baby carrots, cleaned
2       Tablespoons of olive oil
1       Teaspoon black pepper
1-2    Teaspoons sea salt


Instructions:

1) Preheat oven to 350 degrees
2) Mix oil, salt, pepper and carrots together, until carrots are coated, in a bowl
3) Put carrots on a tray and cook in oven 35 minutes or until tender 
4) Optional: season with more salt and pepper
Visuals:
Mix Carrots, oil, salt and pepper in bowl
Place coated carrots on tray
Cook until tender
Enjoy!


Great as: 
- side dish
- snack

The Recipes: Pineapple Mint Salad

This is the easiest recipe almost ever. 
Pineapple Mint Salad


Ingredients:

2      cups medium diced pineapple, bite size
1/2   large red onion medium diced, bite size
1      medium sized cucumber medium diced, bite size, 1 1/2 cups
5      large mint leaves sliced thinly
salt to taste

Instructions:
 1) place ingredients in bowl, mix

This is one of my favorite things!
Guac


Ingredients:

1/3      cup corn, fresh, frozen, canned
2         ripe avocados
1         lime, juiced
1         roma tomato, diced small
1/2      small red onion, diced small
1         clove garlic, minced
1         small bunch of cilantro
1/2      teaspoon cumin
1         decent squirt of hot sauce or 1/2 jalapeno, minced


Instructions:

1) slice avocado in half and remove the pit.  
2) place flesh on avocado and lime juice in bowl and mix until smooth or desired consistency. 
3) add corn, tomato, red onion, garlic, cilantro, cumin and hot sauce/ jalapeno
4) add salt and pepper to taste


Visuals:

Cut avocado in half
Remove the pit and place flesh in bowl
Squeeze in one limes juice
Mix until smooth

Add corn
Cut off top of tomato 
Remove seeds by using a butter knife or spoon handle to break the seed pockets

Cut in half and then dice

Mince garlic


Dice half of a small onion 

Thinly slice cilantro
Add hot sauce/ jalapeno and cumin, mix and serve
ENJOY!
Tips:
If you do not eat all of your Guac, store in refridgerater. Place plastic wrap directly on top of Guac, removing all the air bubbles to the outside of the container. Avocados turn brown when oxidized.

The Recipes: Lemonlimemint-ade

Lemonlimemint-ade, the easiest and tastiest drink for the summer season!



Ingredients:

3 lemons (all juice should be roughly 1/2 a cup)
2 limes
2 tablespoons agave nectar
4 cups water
1 sprig fresh mint, minced


Instructions:

1) juice lemons and limes
2) strain juice and put into storage container
3) add mint, agave, and water, stir and refrigerate
4) strain before serving

Visuals:



Roll lemon and limes to make it easier to juice

Cut lemon and limes in half

If you don't have a juicer, using a fork works just as good!


Strain to get all pulp out

Add water and agave
Need it to be more sweet? Add more agave

Minced fresh mint 

Stir in and keep in fridge

Strain and serve chilled!

ENJOY!

This is a awesome drink to bring to a party or picnic! Great refreshing drink for the summertime! As fresh as you can get!

Well heres a solution, COMPOSTING. 

NYC has a truly awesome compost program. There are so many food scrap drop-off places ALL over!


How Do I get started?


Step one: What to save

  • Fruit
  • Vegetables scraps
  • Non-greasy food scraps (rice, pasta, bread, cereal, grains, etc)
  • Coffee Grounds
  • Coffee Filters
  • Tea Bags
  • Egg Shells
  • Nut Shells
  • Pits
  • Cut or Dried Flowers
  • House Plants
  • Potting Soil
What not to save

Step Two: Where to store compost at home

You would think storing compost would be hard, but its really easy.
Keep your compost in any container (I use plastic bags that you put produce in when you go to the supermarket. Store your storage container with compost in refrigerator or freezer (i've had best luck with the freezer, no odor, no hassle.

FAQ:

How often do you drop off your compost?

 It really depends on how much compost I have. There are two contributors to our household compost, in which we usually drop off every week (Saturdays to be precise). Sometimes if my roommate and I have both been busy, we can get away with two weeks, but its always a wonderful walk through the park to go to Grand Army Plaza Greenmarket

The Recipes: Pineapple Sorbet


Getting ready for summer, enjoy this sorbet!

Ingredients:

1      ripe pineapple
4      tablespoons sugar
1      cup water
4      tablespoons fresh lemon juice

Equipment:
Blender

Instructions:

2) Put sugar, water, lemon juice and pineapple in blender
3) Blend until completely smooth
4) Freeze for four hours or until frozen, mix frequently for best results
5) Re-blend and serve 

6) Store in freezer 

Visuals:

Pineapple, Sugar, Lemons, Water 
Combine in blender
Blend until smooth
Store in freezer
(Bottom half of our freezer is compost [: )
This turned out great!
Delicious & healthy!


Tips:
If pineapple isn't ripe, you may need to add more sugar to make it more sweet
